In my area, the ratio of Eurasian Collared-Doves to Mourning Doves must be something like 100 to 1 now, so I was nice to spot a Mourning Dove and get a good pic:

Your doing a great job getting sharp photos! Here’s two photography tips for you. 
 

1. Lighting. On a cloudy day, you can shot in any direction at any time of day and get nice shots. On a sunny day, getting out in the first two hours after sunrise, and the last two hours before sunset will reward you with fantastic lighting. The sun is low in the sky at these times, giving you a nice low contrast scene with a golden glow to the photos. Also on a sunny day, point your shadow directly at the bird for the least amount of shadows. 
 

2. Wait for the bird’s head to look at you! This mourning dove shot you posted has the bird looking away from the camera. Here is a perfect head angle that you can strive for.

We just got back from Patagonia Lake State Park in Arizona.  The first morning I was there I looked up and saw this Common Black Hawk flying by.  It was the first sighting since January.  It is estimated that there are only 250 breeding pairs in the US.  I threw my camera up and took a few shots.  This is what I was able to get.
